Lately, I’ve been cooking whatever I’ve been craving, and tonight I wanted tacos. Nice and easy, tacos.
Ingredients:
Tacos:
- Tortillas (Corn or Flour)
- Chicken Breast (3-4)
- Honey BBQ Sauce
Salsa:
- Cherry Tomatoes (Usually comes in a little container) Use entire container.
- 2 Cloves of Garlic
- ½ Red Onion
- Parsley or Cilantro
- 1 Lime
- 1 Can of Sweet Corn, or 2 Corn on the Cobs
- Salt & Pepper for Taste
- 2 teaspoons Extra Virgin Olive Oil
Crema:
- 3 tablespoons mayonnaise.
- 4 tablespoons sour cream.
- 1 teaspoon grated lime rind.
- 1 1/2 teaspoons fresh lime juice.
- 1/4 teaspoon salt.
- 1.4 teaspoon pepper.
- Parsley or Cilantro
Instructions:
- Boil chicken breast 25-30 minutes. Depends on how large the breast are.
- While chicken is boiling: Dice tomatoes, onions, garlic, and a handful of parsley or cilantro. Add salt and pepper for taste. Drizzle about two teaspoons of EVOO, and squeeze the entire lime into the mixture. Take your corn, add to hot pan and EVOO, cook on medium high heat until it develops a nice charred color. Add to salsa. Mix Well.
- Add mayonnaise, sour cream, lime rind, lime juice, salt, pepper, and full of chopped parsley, or cilantro, and mix well. Set aside.
- Once chicken is finished , strain, and pull. I like mine finely shredded. Add Honey BBQ sauce to chicken. Mix well.
Grab a flat pan, do not add any oil to it. Just to toast the tortillas quickly, on both sides. Once tortillas are toasted, you’re ready to build your taco.
